You can remove a collection from the WEBKiosk in the same dialog that is used to connect them. 

Go to "My Publications".

Scroll down to your Collections and click on the "Setting" icon at the collection you want to remove.

Now click on the "Connect" Button and uncheck the Kiosk you want your collection to be removed from.
